Curry "Chicken" Tofu Salad
















I used to love a curried chicken salad sandwich before I went veg. This is WAY yum substitute on wheat bread with some sprouts and tomato slices.

* 1 package extra-firm tofu, cubed
* 1 cup plain yogurt
* 2 tablespoons lime juice
* 2 tablespoons curry powder
* 1 cup halved grapes
* 3/4 cup cooked rice (I cooked my rice in Better than Bullion No-Chicken Chicken Bullion this time to make it taste more chicken-saladish, but I’ve made it with regular rice too. Delish either way.)

Bring a pot of water to a boil. Cook cubed tofu for 3 minutes; drain, and set aside to cool.

In a bowl, blend yogurt with lime juice and curry powder; set aside.

In a large mixing bowl, toss together halved grapes, celery, onions, nuts, rice, and tofu.

Add the curry mixture and stir until tofu is evenly coated. Salt & Pepper to taste.

Family Dinner - Low Country Boil

So, we've started a fun new tradition - family dinners with friends.  Cooking and eating a delicious meal with good friends is the perfect way to spend an evening. The first one we had was black bean burgers which was a huge success, but, it was unfortunately undocumented. This week we tried a low country boil which was delicious and foolproof.
Basically, you dump everything into a huge pot.....

then eat. Everyone will be full and happy!

 Here's the recipe....

Ingredients-
~ 12ish new potatoes, or larger potatoes, cut into quarters or halves
~ 1-2 packs of anouille sausages, cut into pieces
~ 6-8 ears of corn, cut in half
~ 3 pounds of shrimp, unpeeled
~ 2 onions, quartered
~ crab/shrimp boil seasoning in a bag
~ 2-3 tbsp old bay seasoning
~ a few bay leaves
~ salt and pepper to taste

Fill a large pot with water. When it comes to a boil, add all of your seasonings, corn, potatoes and sausage. Cook for 20 -30 minutes, depending on how big your potatoes are. Add the shrimp and cook for 3-5 minutes, you don't want to over cook them or they will become rubbery and disgusting. Serve with crusty bread and enjoy!
